Chunky Minestrone

Cottage Pie

An all time classic that everyone will love - great for a quick, easy and casual meal.

Serves 4

Ingredients

  • 1-1/2 (375ml) cups spiral pasta
  • 2 medium potatoes diced
  • 1 large onion diced
  • 1/2 jar pasta sauce
  • 1 large tomato
  • 2 sticks celery
  • 1/3 cup (80ml)¬†peas
  • 1/4 capsicum
  • leftover diced beef (optional)
  • 2 tablespoons (30ml) olive oil
  • 2 OXO Beef stock cubes or Vegetable stock cubes

Method

  • Heat oil in large saucepan and stir to coat vegetables.
  • Add 2 OXO Beef flavoured or OXO Vegetable stock cubes mixed in 500ml water.
  • Bring to boil and simmer for 20 mins.
  • Add water to achieve desired consistency.
  • Serve with chunky bread

VARIATIONS:

Try add a splash of red wine for an extra special minestrone!
